Shiitake (Lentinula edodes) is referred to as a potent immune modulating plant which means it possesses the ability to strengthen the part of immune system required to fight off infection and dampen down the part of the immune system associated with autoimmune disorders and cancer.

The mushroom, which can be incorporated into the everyday diet, contains high molecular weight polysaccharides (complex sugars) such as lentinan which potently induce an immune substance called interferon and also have demonstrated anti-tumour activity. As such, it can be used as an adjunctive therapy for cancer especially during chemotherapy and radiotherapy (to protect the immune system) and conditions marked by poor immune function such as HIV/AIDS, post viral syndromes and chronic fatigue.  Shiitake also contains high amounts of vitamin D which is vital for effective treatment of cancer.
